Baked Mackerel

- 1 onion peeled and julienned
- 1 leek julienned
- 2 potatoes sliced 2 centimeters thick
- olive oil
- 2 mackerel medium-sized
- ground black pepper
- salt
- 2 garlic cloves diced, optional
- fresh parsley diced, optional
Directions

1Preheat the oven to 170 degrees Celsius.

2Saute the onion and leek in a skillet no more than 2 minutes stirring occasionally.

3In an ovenproof dish, make a bed of the sliced potatoes. Cover with the softened onions and leeks. Salt and black pepper to taste, and drizzle with olive oil.

4Bake for 20 minutes.

5Remove the dish from the oven and place on top of the vegetables the mackerel seasoned with salt and black pepper. Bake another 20 to 22 minutes depending on the size of the fish.

6As an option, you can lightly saute together diced garlic and parsley and stuff the fish with this mixture before baking it.
