- 1 3/4 c. all-purpose flour
- 1/2 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 2/3 c. milk
- 1/3 c. butter or oleo
- 1 tsp. grated lemon peel
- 1/2 c. raspberry or strawberry jam
Directions

1In a large bowl, combine flour, sugar, baking powder and salt. In small bowl, lightly beat eggs; add milk, butter and lemon peel.

2Pour into dry ingredients; stir just until moistened. Spoon half of batter into 12 greased or lined muffin cups.

3Make well in center of each; add jam.

4Spoon remaining batter over jam. Bake at 400° for 20 to 25 minutes or until golden brown.
