- 2 cups White Flour
- 3 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 1/4 cups White Sugar
- 1/4 cups Brown Sugar
- 1 whole Large Egg, Beaten
- 3/4 cups Milk
- 1/4 cups Vegetable Oil
- 1 cup Fruit Jam, Any Flavour
Directions

1Preheat your oven to 325°F with a rack in the middle position. Spray or line your muffin tins (recipe makes 18 standard sized muffins).

2In a large bowl, whisk together the flour, baking powder, salt, and sugars.

3In a small bowl, mix together the egg, milk, and vegetable oil.

4Pour the milk mixture into the flour mixture and stir with a wooden spoon until just combined, with no flour left showing.

5Add the jam and stir it in so that it swirls throughout the batter. Do not over mix.

6Fill your muffin tins 3/4 of the way full and bake for about 25 minutes. Be sure to keep your eye on them if you use mini muffin tins, as the time will be shorter.
