- Pastry:
- With fingertips or a pastry blender quickly work together until granular, 2 cups flour a pinch salt 4 ounces chilled and cubed unsalted butter, 2/3 cup sugar and the grated peel of a lemon. Beat together 2 egg yolks, 1 tablespoon lemon juice and 2 tablespoons ice water and quickly work into flour. Gather into a ball wrap and chill. Roll out dough and cut with a 3 inch crinkled cutter. Fit into molds of the tart plaque and chill again. Prick pastry with a fork and bake in a 400 degree oven for 5 to 6 minutes. Put 1 tablespoon of mincemeat or lemon curd in each shell. Reduce the heat to 375 degrees and bake another 5 to 10 minutes until pastry is golden.
