Jamaican Bread Pudding

Ingredients

  • 4 cups white bread cubed
  • 1/2 cup raisins soaked
  • 1/2 cup currant Soaked
  • wine Red Label
  • 2 cups low fat milk
  • 3 eggs
  • 1/3 cup margarine
  • 1/3 cup sugar
  • 1 teaspoon ground nutmeg
  • 1 teaspoon cinnamon powdered
  • 1 tablespoon vanilla
  • 1/4 cup white rum
  • 1/3 cup oil
  • 1 tablespoon mixed spice

Directions

    Soak raisins and currant in wine for at least 1 hour (longer is better)

    Combine bread, raisins and currant in a large bowl

    Combine milk and butter in a sauce pan

    Cook over medium heat until butter is melted

    Pour Milk over bread and let stand for 10-15 minutes

    Preheat oven to 350 degrees F / 177 degrees C (if using a dark baking tin - reduce temp to 325 degrees F)

    Stir all remaining ingredients

    Pour into a greased bake tin

    Bake for 35-45 minutes or until set in center (if using a dark baking tin - bake for 40 minutes)

    Allow pudding to cool

    Serve in individual dessert dishes with chocolate sauce (or sauce of choice)
