Jamaican Bread Pudding

Ingredients
- 4 cups white bread cubed
- 1/2 cup raisins soaked
- 1/2 cup currant Soaked
- wine Red Label
- 2 cups low fat milk
- 3 eggs
- 1/3 cup margarine
- 1/3 cup sugar
- 1 teaspoon ground nutmeg
- 1 teaspoon cinnamon powdered
- 1 tablespoon vanilla
- 1/4 cup white rum
- 1/3 cup oil
- 1 tablespoon mixed spice
Directions

1Soak raisins and currant in wine for at least 1 hour (longer is better)

2Combine bread, raisins and currant in a large bowl

3Combine milk and butter in a sauce pan

4Cook over medium heat until butter is melted

5Pour Milk over bread and let stand for 10-15 minutes

6Preheat oven to 350 degrees F / 177 degrees C (if using a dark baking tin - reduce temp to 325 degrees F)

7Stir all remaining ingredients

8Pour into a greased bake tin

9Bake for 35-45 minutes or until set in center (if using a dark baking tin - bake for 40 minutes)

10Allow pudding to cool

11Serve in individual dessert dishes with chocolate sauce (or sauce of choice)
