- 2 tsp. powdered ginger
- 12 oz. plain flour
- 2 oz. mixed candied peel
- 2 oz. dark brown sugar
- 4 oz. butter
- 8 oz. molasses
- 1/2 tsp. bicarbonate of soda
- 4 Tbsp. warm milk
- 2 eggs, well beaten
Directions

1Sift ginger with the flour; add the peel and mix.

2Heat sugar, butter and molasses over low heat until sugar dissolves.

3Dissolve the soda in the milk; add the beaten eggs and beat a little more. Add molasses mixture and egg mixture to the flour, mixing thoroughly.
