Ingredients

  • 1 to 1 1/2 lb. fish
  • 15 to 25 shrimp, cut into 1/3
  • 1 c. bacon, chopped
  • 1 medium to large onion, chopped and sliced
  • 1/2 bell pepper (red or green)
  • 1 (4 oz.) can mushrooms
  • 1 (8 oz.) can tomatoes, stewed
  • 1 (4 oz.) can tomato sauce
  • 3 to 4 cloves garlic
  • 1 c. chicken broth
  • 1 pinch nutmeg, thyme, cayenne and red pepper
  • 1 c. long-grain rice (uncooked)

Directions

    Saute in large skillet bacon, onion and green pepper.

    Add mushrooms, tomatoes, tomato sauce, garlic, broth, rice, fish, shrimp and season.

    Pour into greased casserole dish.

    Cover and bake at 350° for 1 hour.
