Ingredients

  • 1 lb. boned chicken breast, cut in pieces
  • 2 Tbsp. butter
  • 12 oz. Polish sausage, sliced
  • 1 small green pepper
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 1 can stewed tomatoes
  • 1/2 c. water
  • 1 1/2 c. Minute rice
  • 1/2 tsp. salt
  • 1/2 tsp. hot pepper sauce

Directions

    Brown chicken in butter in large skillet.

    Add sausage, green pepper, onion and celery; cook until vegetables are just tender, about 5 minutes.

    Mix in tomatoes and water; bring to a full boil. Stir in rice, salt and hot pepper sauce.

    Cover and remove from heat.

    Let stand for 5 minutes.

    Makes about 4 servings.
