Ingredients

  • 1 stick oleo
  • 1 chopped onion
  • 1/2 chopped bell pepper
  • 3 ribs celery, chopped
  • 1/4 lb. smoked sausage
  • 1 1/2 c. diced chicken
  • 1/2 lb. ham, cubed
  • 1 1/2 c. tomatoes
  • 1 c. water or broth (can substitute 1 can tomatoes)
  • 1 pkg. jambalaya seasoning mix
  • 1 tsp. herb seasoning with spice
  • 1 tsp. cajun herb seasoning
  • 1/4 tsp. black pepper
  • salt to taste
  • 2 Tbsp. gumbo mix

    Heat oleo; add sauteed onion and meats.

    Add rest of vegetables.

    Mix well and cook slowly for 1 hour.
