Ingredients

  • 1 Tbsp. olive oil
  • 1/2 lb. ham, in 1/2-inch pieces
  • 1/2 lb. kielbasa, in 1/2-inch pieces
  • 1 large onion, diced
  • 1 green and 1 yellow pepper, diced
  • 2 celery ribs, diced
  • 3 cloves garlic, minced
  • 1 1/2 c. raw, long grain rice
  • 15 oz. seasoned diced tomatoes
  • 2 c. chicken broth
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme
  • 1/4 tsp. crushed red pepper

    Heat oil in large skillet. Add ham and kielbasa.

    Heat 7 to 8 minutes.

    With slotted spoon, remove from pan.

    In same skillet, saute onion, peppers, celery and garlic 5 to 6 minutes until soft. Stir in rest of ingredients and heat to boil.

    Reduce heat.

    Cover and simmer 15 minutes. Add ham and kielbasa. Cover and simmer 4 more minutes, stirring once. Remove from heat.

    Let stand 5 minutes.
