- 1 stalk celery
- 1 large onion
- 1 large green pepper
- margarine
- garlic salt
- 3 to 4 lb. boneless, skinless chicken breast, cut in chunks
- 1 pkg. smoked sausage, cut in chunks
- 1 large can tomatoes
- water
- 1 1/2 to 2 c. Minute rice
Directions

1In 3-quart pan, saute celery, onion and green pepper in margarine and garlic salt until tender.

2Add chicken and sausage. Cook until done, approximately 30 minutes.

3Add tomatoes and water to fill pan.

4Simmer 1 to 2 hours.

5Season to taste.

6Remove from heat.

7Add rice.

8Serve with salsa or plain.
