  • 6 medium potatoes
  • water
  • salt
  • 3 Tbsp. oil
  • 1/2 tsp. salt
  • black pepper
  • 1/2 tsp. oregano
  • 1/2 thyme
  • dash of cayenne pepper
  • 1/3 c. Parmesan cheese
  • 2 Tbsp. grated Cheddar cheese

    Cut each potato in half lengthwise, then cut into even wedges.
