- 1/2 c. diced onion
- 1/4 c. diced green pepper
- 1 lb. ground beef
- 1 large can tomatoes
- 1 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. thyme
- 1 small bay leaf
- 1 1/2 c. packed precooked rice
Directions

1Melt butter in skillet at medium heat.

2Add onions, peppers and beef.

3Cook, stirring often.

4Drain fat.

5Drain tomatoes, measuring juice.

6Add water to make 1 1/2 cups.

7Add liquid and spices to skillet.

8Cover; simmer 5 minutes.

9Stir in rice; cover and simmer 5 minutes longer.

10Discard bay leaf.
