- 7 c. chicken broth
- 1 bunch celery
- 2 bunches green onions
- 2 large bell peppers
- 1 large red pepper
- 2 lb. hot sausage
- 3 1/2 c. Uncle Ben's converted rice
- 1 Tbsp. Tabasco or more
- 2 Tbsp. Worcestershire
- liquid smoke to taste (1 Tbsp. or less)
Directions

1Fix chicken.

2Fry sausage; save drippings in the pan.

3Brown rice in drippings, then add chicken and broth.

4Brown vegetables in oil.

5Add to other mixture.

6Add Worcestershire, Tabasco and liquid smoke.

7Salt and pepper to taste.

8Cover and bake at 375° for 1 hour.
