Ingredients

  • 2 whole chickens, boiled and boned
  • 7 c. chicken broth
  • 1 bunch celery
  • 2 bunches green onions
  • 2 large bell peppers
  • 1 large red pepper
  • 2 lb. hot sausage
  • 3 1/2 c. Uncle Ben's converted rice
  • 1 Tbsp. Tabasco or more
  • 2 Tbsp. Worcestershire
  • liquid smoke to taste (1 Tbsp. or less)

    Fix chicken.

    Fry sausage; save drippings in the pan.

    Brown rice in drippings, then add chicken and broth.

    Brown vegetables in oil.

    Add to other mixture.

    Add Worcestershire, Tabasco and liquid smoke.

    Salt and pepper to taste.

    Cover and bake at 375° for 1 hour.
