- 1 large hen or 2 fryers
- 3 c. uncooked rice
- 2 large onions, chopped
- 1 large bell pepper, chopped
- 1 clove garlic, minced
- 1 to 1 1/2 lb. smoked sausage
- salt, black pepper and red pepper to taste
- 6 c. water
Directions

1Fry sausage and remove from grease.

2Set aside.

3Fry hen to golden brown and remove from oil.

4Cool and debone.
-
5Pour off most of oil where chicken was fried.

6Add onions to oil and saute.
-
7Then add celery, pepper and garlic with a little water.

8Add chicken and sausage to vegetables.
-
9Reduce heat.
-
10Cover and let simmer until chicken is tender.

11Add water and let come to a rapid boil.

12Add uncooked rice.
-
13Stir slowly.
-
14Let come to a boil and then reduce heat as low as possible.
-
15Occasionally lift rice from bottom of pot without stirring.
-
16Let cook on low heat for 45 minutes.
