  • 1/4 c. oil
  • 1 chicken, cut up or boned
  • 1 1/2 lb. sausage (not Italian)
  • 4 c. onions
  • 2 c. each: celery and green pepper
  • 1 c. green onion, chopped
  • 1 Tbsp. garlic, chopped
  • 4 c. long grain rice
  • 5 c. stock or water and bouillon
  • 3 heaping tsp. salt
  • cayenne pepper
  • 1 c. parsley, chopped

Directions

    Saute sausage in oil (lard or bacon drippings).

    Remove from pot.

    Season and brown chicken.

    Remove from pot.

    For brown jambalaya, add heaping tablespoon of brown sugar to oil and caramelize.

    For red jambalaya, delete this step.
