- 1 1/2 lb. sausage (not Italian)
- 4 c. onions
- 2 c. each: celery and green pepper
- 1 c. green onion, chopped
- 1 Tbsp. garlic, chopped
- 4 c. long grain rice
- 5 c. stock or water and bouillon
- 3 heaping tsp. salt
- cayenne pepper
- 1 c. parsley, chopped
Directions

1Saute sausage in oil (lard or bacon drippings).

3Season and brown chicken.

5For brown jambalaya, add heaping tablespoon of brown sugar to oil and caramelize.

6For red jambalaya, delete this step.
