- 1/2 c. diced ham
- 2 c. shrimp, cleaned and cooked
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 crushed garlic clove
- 2 Tbsp. oil
- 3 1/2 c. crushed tomatoes
- 1 1/2 c. water
- 1/2 tsp. thyme leaves
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 bay leaf
- 3/4 c. long grain white rice
Directions

1Saute onion, green pepper and garlic in oil in large saucepan. Stir in ham, crushed tomatoes, water, seasonings and rice.

2Heat to boiling.

3Reduce heat; boil gently covered for 20 to 25 minutes or until rice is tender.

4Stir occasionally.

5Add shrimp.

6Cook 5 more minutes.

7Remove bay leaf and serve.
