- 1 large onion
- 3/4 c. celery
- 1/2 c. green pepper
- 1/8 tsp. garlic, minced
- 3/4 stick margarine
- 24 oz. can whole tomatoes
- 6 oz. can tomato paste
- 1 lb. Polish sausage
- 1 1/2 tsp. Creole seasoning
- 2 lb. chicken breasts, cut into bite sizes
- 1 tsp. hot sauce
- 2 c. rice, cooked
Directions

1Cook in big saucepan; add onion, celery, green pepper, garlic and margarine; cook for 15 minutes.

2Add whole tomatoes, tomato paste, Polish sausage (cut up into bite size pieces) and Creole seasoning.

3Cook for 45 minutes.

4Add bite size chicken and 1 teaspoon hot sauce; cook for 30 minutes.

5Add 2 cups cooked rice and simmer all for 5 to 10 minutes.
