  • 1 cup rye flakes
  • 1 cup oats
  • 1 cup quinoa
  • 6 cups hot water
  • 14 cup molasses
  • 12 cup powdered milk
  • 2 eggs
  • 4 tablespoons yeast
  • 14 cup oil
  • 1 cup cornmeal
  • 1 cup rice flour
  • 4 cups whole spelt flour
  • 2 tablespoons vital gluten
  • 10 -11 cups white spelt flour

Directions

    soak flakes in hot water.

    add molasses and powdered milk.

    when cool enough, add yeast and beaten eggs.

    stir in cornmeal, rice flour, whole spelt flour and vital gluten.

    Add white spelt flour until thick enough to knead and then knead until dough no longer sticks to the countertop:.

    shape into 4, 2# loaves, bake at 375, 40 to 45 minutes, or until loaves sound hollow when you tap the bottom of the pan.
