  • 1 large bag frozen hash brown potatoes (chunks)
  • 6 Tbsp. butter
  • 1 diced yellow onion (small)
  • 1 can cream of chicken soup (condensed)
  • 1 pt. sour cream
  • 10 oz. grated Cheddar
  • 1.5 c. corn flakes, crushed
  • salt and pepper

Directions

    Defrost potatoes in microwave until slightly frozen.

    Spread in 9 x 12-inch glass pan.

    Sprinkle 3 tablespoons melted butter and onion over potatoes.

    Mix soup and sour cream.

    Salt and pepper potatoes.

    Spread mixture over potatoes.

    Sprinkle cheese on top.

    Sprinkle crushed cornflakes mixed with 3 tablespoons butter over top.

    Bake at 350° for 45 to 60 minutes.

    Cover with foil if corn flakes get too brown.
