Ingredients
- 1 lb. ground chuck or turkey
- 1 c. carrots, grated
- 6 oz. potatoes, grated
- 1 small onion, grated
- 1/2 c. skimmed evaporated milk or 1/3 c. powdered milk, mixed with 1/2 c. water
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. cream of mushroom, 1 chicken, broccoli or 1/2 tomato soup
Directions

1Grate carrots, potatoes and onion.

2Spray a nonstick skillet with cooking spray.

3Saute onion until transparent.

4Mix ground chuck or turkey, carrots, potatoes, salt and pepper.

5Shape into meat balls.

6Cook meat balls in a sprayed skillet until brown. Place cooked meat balls in a single layer in a large baking dish. Mix soup and milk together.

7Pour mixture over meat balls; bake, uncovered, for 20 minutes in a 350° oven.

8Serves 4.
