Ingredients

  • 1 c. raw rice
  • 1 c. chopped tomato
  • 1/2 c. chopped green onions (some tops)
  • 1/2 c. butter
  • 3 c. chicken broth
  • 1/2 c. red wine
  • 2 tsp. salt
  • dash of pepper
  • 1 c. cooked peas
  • 1/4 c. Parmesan cheese
  • 1 lb. chopped mushrooms or sliced, canned mushrooms

Directions

    In a large skillet, cook rice, tomatoes, mushrooms and onions in butter for 10 minutes.

    Stir well.

    Add wine and seasonings; mix well.

    Add broth.

    Cover; simmer for 45 minutes.

    When rice is tender, add peas and sprinkle with cheese.

    Serve.
