Ingredients
- 1 c. raw rice
- 1 c. chopped tomato
- 1/2 c. chopped green onions (some tops)
- 1/2 c. butter
- 3 c. chicken broth
- 1/2 c. red wine
- 2 tsp. salt
- dash of pepper
- 1 c. cooked peas
- 1/4 c. Parmesan cheese
- 1 lb. chopped mushrooms or sliced, canned mushrooms
Directions

1In a large skillet, cook rice, tomatoes, mushrooms and onions in butter for 10 minutes.

2Stir well.

3Add wine and seasonings; mix well.

4Add broth.

5Cover; simmer for 45 minutes.

6When rice is tender, add peas and sprinkle with cheese.

7Serve.
