  • 4 lb. pork roast
  • 2 tsp. black pepper
  • 1 1/2 tsp. salt
  • 1 tsp. red pepper (cayenne)
  • 1 tsp. sweet paprika
  • 1 tsp. thyme
  • 1/2 tsp. dry mustard
  • 3 Tbsp. butter
  • 1 Tbsp. oil
  • 1/2 c. finely chopped onion
  • 1/2 c. celery, chopped
  • 1/2 c. pepper, chopped (optional)
  • 1 Tbsp. minced garlic

    Combine all the ingredients.

    Make slits and place mixture into slits in the roast.

    Roast in baking pan, uncovered, at 275° for 3 hours, then at 425° until dark brown.
