- 4 lb. pork roast
- 2 tsp. black pepper
- 1 1/2 tsp. salt
- 1 tsp. red pepper (cayenne)
- 1 tsp. sweet paprika
- 1 tsp. thyme
- 1/2 tsp. dry mustard
- 3 Tbsp. butter
- 1 Tbsp. oil
- 1/2 c. finely chopped onion
- 1/2 c. celery, chopped
- 1/2 c. pepper, chopped (optional)
- 1 Tbsp. minced garlic
Directions

1Combine all the ingredients.

2Make slits and place mixture into slits in the roast.

3Roast in baking pan, uncovered, at 275° for 3 hours, then at 425° until dark brown.
