Ingredients
- 1 12 lbs lean beef chuck roast, sliced about 1/8 to 1/4 inch thick and cut into strips
- 4 tablespoons soy sauce
- 1 teaspoon lemon juice
- 1 teaspoon lime juice
- 1 teaspoon brown sugar
- 12 teaspoon black pepper
- 12 teaspoon cayenne pepper
- 14 teaspoon ground allspice
- 14 teaspoon garlic powder
Directions

1Combine marinade ingredients in a plastic zipper bag.

2Add meat slices and mix thoroughly with marinade.

3Marinate overnight.

4Cover oven racks with aluminum foil.

5Preheat to 170 degrees.

6Place beef strips on foil.

7Prop open oven door slightly with an oven mitt to allow humidity to escape.

8Cook jerky for about 4 and 4 1/2 hours .
