Ingredients

  • 10 lb. meat (round steak, deer meat, any lean meat)
  • 1 1/2 c. brown sugar
  • 2 Tbsp. salt
  • 1/4 c. honey
  • 2 Tbsp. black pepper
  • 1/4 c. soy sauce
  • 1/4 c. Worcestershire
  • 1/4 c. red vinegar wine
  • 2 Tbsp. garlic powder

Directions

    Cut meat into 1/4 x 1/2-inch strips; soak strips in jerky cure for 3 days (mixing often).

    Take out of cure and wash off; soak meat in mixture for 3 or 4 days, mixing often.

    Take out of mixture and place on racks.

    Pepper to taste (red or black). Smoke in smoker at 145° for 10 hours.

    Jerky cure can be purchased from your local meat market.
