Jiffy Lemon Cups

Ingredients
- 6 large lemons, rind removed
- 250 g custard
- 75 g icing sugar
- 300 ml whipping cream
Directions

1Place the rind in a bowl.

2Cover with 4 tablespoon of boiling water.

3Let it soak.

4Cut a lid off the top of each lemon.

5Scoop flesh from lemons into a sieve placed over the bowl containing the zest.

6Squeeze all juice from the flesh and discard solids.

7Place lemon shells and lids in a shallow, freezerproof dish and freeze.

8Place custard in a bowl.
-
9Strain over lemon juices and discard zest.

10Stir in icing sugar.

11Whip cream until stiff.

12Fold into custard mixture.

13Freeze until lightly frozen.

14Then whisk.

15Spoon into lemon shells and freeze for 2 hours or until firm.

16Remove lemons from freezer 20 minutes before serving.

17Top with lids.

18Garnish with mint sprigs.
