Ingredients
- 1 slab pork ribs
- 1 onion, diced
- 2 bay leaves
- 2 Tbsp. grated fresh ginger
- 4 cloves garlic, minced
- 2 tsp. pepper
- 1/4 c. soy sauce
- 2 tsp. vinegar
- 2 tsp. oyster sauce
Directions

1Trim excess fat from ribs.

2Cut into single bone.

3Cut into squares, 2 x 2-inch size.

4Put ribs in deep frying pan.

5Add the rest of the ingredients except the bay leaves.

6Mix well by hand so that all the meat is well seasoned.

7Put 2 bay leaves on top of meat.

8Cover and cook on low heat until meat is simmering.

9Mix again and separate each piece from each other.

10Turn heat to medium and cook for 1 hour or until the meat is tender.

11Take cover off and continue cooking until only oil is left.

12Drain fat.

13Serve hot.
