- 4 -5 tomatoes
- 2 green bell peppers
- 1 large red onion
- 34 cup olive oil
- 14 cup red wine vinegar
- 1 teaspoon minced garlic clove
- 2 teaspoons sugar
- 1 12 teaspoons salt
- 14 teaspoon pepper
- 7 -8 fresh basil leaves (optional)
Directions

1Chop the tomatoes, peppers and red onion into bite sized pieces.

2Combine the olive oil, vinegar, garlic, sugar, salt and pepper and pour over the vegetables.

3Chop the basil and add.

4Chill for at least 2 hours, but it gets better the longer it marinates.
