Ingredients

  • 1 lb. chopped onions
  • 2 lb. chopped bell peppers
  • 5 lb. peeled, chopped tomatoes
  • 3 (3 oz.) cans chilies, chopped finely
  • 1 can jalapeno peppers, chopped finely
  • 3 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 pkg. taco seasoning
  • 3/4 to 1 c. vinegar
  • 6 to 8 green hot peppers, chopped finely

Directions

    Chop vegetables and simmer with other ingredients for 15 minutes or until desired thickness.

    Pour into 6 clean, hot, half pint or pint jars, leaving 1/2-inch headspace.

    Process in boiling water bath for 20 minutes.

    Makes roughly 12 half pints or 6 pints.
