- 1 lb. chopped onions
- 2 lb. chopped bell peppers
- 5 lb. peeled, chopped tomatoes
- 3 (3 oz.) cans chilies, chopped finely
- 1 can jalapeno peppers, chopped finely
- 3 tsp. salt
- 1/2 tsp. pepper
- 1/2 pkg. taco seasoning
- 3/4 to 1 c. vinegar
- 6 to 8 green hot peppers, chopped finely
Directions

1Chop vegetables and simmer with other ingredients for 15 minutes or until desired thickness.

2Pour into 6 clean, hot, half pint or pint jars, leaving 1/2-inch headspace.

3Process in boiling water bath for 20 minutes.

4Makes roughly 12 half pints or 6 pints.
