Juicy Pineapple Cake

Ingredients

  • 1 1/2 c. sugar
  • 1 tsp. soda
  • 18 oz. can crushed pineapple
  • 1 c. coconut (optional)
  • dash of salt
  • 2 c. flour
  • 1 tsp. vanilla
  • 1 egg
  • rest of can of evaporated milk (from sauce)
  • 1 c. chopped nuts (optional)

Directions

    Combine ingredients and stir until just mixed.

    Pour into greased and floured 9 x 13-inch cake pan.

    Take about 2 handfuls or so of brown sugar and spread around on top of cake.

    Bake at 350° for 30 to 40 minutes until lightly browned.

    Remove from oven and prick all over with meat fork and pour sauce all over cake.
