- 2 tsp. unsalted butter
- graham crackers
- 7/8 c. sugar
- 3 tsp. sifted cornstarch
- 3 oz. cream cheese at room temperature
- 1 extra large egg
- 1/2 c. heavy cream
- 3/4 tsp. vanilla
Directions

1Preheat oven to 450°.

2Liberally grease the side and bottom of an 8-inch spring-form pan with butter.

3Crush to powder enough graham crackers to lightly coat bottom.

4Refrigerate pan until ready to use.

5Mix the sugar with the cornstarch.

6Add the cream cheese and stir to blend well; stir in egg and blend again.

7Add heavy cream, a little at a time and mix.

8Stir in the vanilla. Spoon the batter into prepared pan.

9Bake for approximately 40 minutes until top is golden brown.

10Transfer cheesecake to a rack and let cool for 3 hours.
