Kaitai Fire Rice

Ingredients
- 1 cup rice
- 1 cup peas
- 1 onion
- 2 tbsp oil
- 2 eggs
- 2 tbsp soy sauce
- 1 tbsp ginger
- 1 clove garlic
- 1 Sriracha hot sauce
- 1 Kaitai Fire (or Tobasco) sauce
Directions

1boil/steam/prepare rice

2heat wok or pan until very hot

3fry onion, ginger, garlic in oil until onion becomes soft and transluscent

4add meat if desired
-
5add peas and other vegetables desired as well as the rice.

6fry for 1-2 minutes

7make open area in wok/pan.

8add one egg at a time, making sure to mix each thoroughly into the mixture
-
9cook the rice until egg is no longer observably runny, then add the soy sauce.

10mix well
-
11add sriracha to desired level of heat.

12add a few drops of kaitai (or tobasco) sauce for flavor
-
13serve hot with a hoppy IPA
