Ingredients

  • 1 tsp. olive oil
  • 1/2 large onion, chopped
  • 1 or 2 cloves garlic, chopped
  • 2 c. navy beans
  • smoked kielbasi, sliced
  • 4 to 6 c. chicken stock
  • 1/4 tsp. crushed red pepper
  • fresh kale greens
  • 2 to 4 potatoes, chopped
  • 2 Tbsp. sugar

Directions

    Soak beans in water 4 to 6 hours or overnight.

    In large pot, add olive oil, onions, sliced kielbasi and garlic.

    Saute; do not brown.

    Add chicken stock and navy beans; let cook 15 minutes. Add kale, crushed red pepper and sugar.

    Let cook 20 minutes.

    Add potatoes.

    Stir well.

    Let cook 2 hours, stirring occasionally.
