Kale with Quinoa and Corn

Ingredients

  • 1/4 cup quinoa
  • 1/2 cup water
  • 1/2 cup whole kernal corn
  • 2 cup steamed kale - stems removed

Directions

    Combine your water, quinoa, and corn and bring to a boil.

    Reduce heat to simmer until quinoa is done, about 15 or 20 minutes.

    May have to add a touch more water.

    Take your kale and steam for 5 minutes.

    I use my rice cooker with the steamer basket.

    Combine everything and add salt and pepper to taste.
