Kase Spatzle with Cabbage

Ingredients
- 4 shallots, thinly sliced
- 1 small head cabbage, shredded
- 2 T. canola oil
- to taste salt & pepper
- 4 T. butter
- 1 1/2 pounds prepared spatzle
- 1/2 t. ground paprika
- 1/4 C. fresh parsely, chopped
- 5 oz. shredded swiss cheese, preferably Emmentaler
Directions

1Fry the shallots in the canola oil in a large skillet until soft and translucent.

2Melt the butter in the skillet and then saute the cabbage until tender, sprinkling generously with salt and pepper.

3Stir in the prepared spaztle.

4Sprinkle evenly with cheese, paprika and parsley.

5Cover and cook until cheese melts, about 5-10 minutes.

6Serve.
