Kase Spatzle with Cabbage

  • 4 shallots, thinly sliced
  • 1 small head cabbage, shredded
  • 2 T. canola oil
  • to taste salt & pepper
  • 4 T. butter
  • 1 1/2 pounds prepared spatzle
  • 1/2 t. ground paprika
  • 1/4 C. fresh parsely, chopped
  • 5 oz. shredded swiss cheese, preferably Emmentaler

Directions

    Fry the shallots in the canola oil in a large skillet until soft and translucent.

    Melt the butter in the skillet and then saute the cabbage until tender, sprinkling generously with salt and pepper.

    Stir in the prepared spaztle.

    Sprinkle evenly with cheese, paprika and parsley.

    Cover and cook until cheese melts, about 5-10 minutes.

    Serve.
