  • 2 c. diced fresh tomatoes
  • 1/3 c. red wine vinegar
  • 1/4 c. thinly sliced green onions (including green top)
  • 1/4 c. chopped parsley
  • 2 Tbsp. minced red onions
  • 1 Tbsp. minced fresh cilantro
  • 2 or 3 Tbsp. minced jalapeno peppers
  • 1 tsp. salt
  • 1/2 tsp. pepper
