  • 48 ripe tomatoes
  • 2 ripe sweet peppers
  • 2 sweet green peppers
  • 4 onions
  • 3 c. white vinegar
  • 3 c. sugar
  • 3 Tbsp. salt
  • 3 tsp. dry mustard
  • 1/2 tsp. red pepper
  • 1/2 tsp. whole allspice
  • 1 1/2 tsp. whole cloves
  • 1 1/2 tsp. cinnamon sticks, broken

Directions

    Quarter tomatoes and remove stems.

    Add peppers, seeds removed, and slice in strips.

    Add chopped onions.

    Place 1/3 in blender or food processor; mix until smooth.

    Repeat until all tomatoes are blended.

    Add vinegar, salt, sugar and spices, tied loosely in muslin bag.

    Simmer, uncovered, until mixture is reduced to 1/2.

    Pour into hot jars and cover loosely with lids. Process at 212° for 10 minutes.

    Remove and tighten lids.
