  • 1 c. sugar
  • 1 c. fresh lime juice
  • 4 egg yolks
  • 2 eggs
  • 1 Tbsp. grated lime peel
  • 2 drops green food coloring (optional)
  • 1 (9-inch) pie shell (graham cracker)
  • 1/2 c. lightly toasted coconut

Directions

    Melt butter in saucepan over low heat.

    Whisk in sugar, lime juice, egg yolks, eggs and lime peel; cook, stirring constantly, until mixture thickens.
