Mexican Supper Rice

Ingredients

  • 1 lb ground beef, cooked and drained
  • 1 (10 3/4 ounce) can cheddar cheese soup
  • 2 -4 tablespoons taco seasoning mix
  • 2 cups water
  • 2 cups quick-cooking rice
  • 1 (15 ounce) can corn, drained
  • 1 cup grated cheese
  • 1 -2 cup tortilla chips, crushed

Directions

    Mix all ingredients except rice, corn and toppings in large saucepan.

    Bring to a boil; reduce heat and simmer two minutes.

    Stir in rice.

    Cover and remove from heat.

    Let stand for 5 minutes.

    Add corn, mix thoroughly.

    Top with grated cheese and tortilla chips.

    Note: Can add a can of black beans drained or small can of chopped ortega chilis.
