  • 1/3 c. sugar
  • 1 envelope unflavored gelatin
  • 1/4 c. fresh lime juice
  • 3 egg yolks, slightly beaten
  • 2 tsp. grated lime peel
  • 2 c. heavy cream
  • 1/8 tsp. green food coloring
  • 1 (9-inch) graham cracker pie shell or baked pie shell

    In top of double boiler, mix sugar and gelatin.

    Combine lime juice and egg yolks; blend into sugar mixture.

    Cook over simmering water until thick, stirring constantly.

    Remove from heat.

    Stir in lime peel and cool.

    Whip cream with food coloring until stiff; fold into gelatin lime mixture.

    Pour into crust. Chill until firm.
