- 1 graham cracker pie shell, baked and cooled
- 4 eggs, separated
- 1 can Eagle Brand condensed milk
- 1/2 c. lime juice (fresh or bottled)
- 2 tsp. grated lime rind (optional)
- 3 drops green food coloring
- 6 Tbsp. sugar
- 1/2 tsp. cream of tartar
Directions

1Preheat oven to 350°.

2Beat egg yolks.

3Add condensed milk and juice; beat until thick.

4Stir in lime rind and food coloring. Pour mixture into crust.

5Stiffly beat eggs until foamy with cream of tartar.

6Gradually add sugar, beating until stiff.

7Spread meringue on top of pie, sealing carefully to edge of crust.

8Bake 15 to 20 minutes or until meringue is golden brown.

9Cool. Refrigerate leftovers.
