15 Bean Soup

Ingredients

  • 2 c. 15 bean soup mix
  • 2 qt. water
  • 2 ham hocks or 4 beef bouillon cubes (some of each is better)
  • 1 1/4 tsp. salt (use less if bouillon cubes are used)
  • 1/2 tsp. pepper
  • 1 pt. tomatoes
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 pod hot pepper
  • 1/4 c. lemon juice

    Wash soup mix and place in large pot.

    Cover with water 2 inches above beans.

    Soak overnight; drain.

    Add 2 quarts of water, ham hocks, salt, pepper and bouillon cubes.

    Bring to a boil, covered, and simmer 1 1/2 hours or until beans are tender. Add tomatoes, onion, garlic, hot pepper and lemon juice.

    Simmer for 30 minutes, stirring often.

    Remove ham hocks, debone and return to soup.

    Yields 2 1/2 quarts.
