Ingredients
- 2 c. 15 bean soup mix
- 2 qt. water
- 2 ham hocks or 4 beef bouillon cubes (some of each is better)
- 1 1/4 tsp. salt (use less if bouillon cubes are used)
- 1/2 tsp. pepper
- 1 pt. tomatoes
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 pod hot pepper
- 1/4 c. lemon juice
Directions

1Wash soup mix and place in large pot.

2Cover with water 2 inches above beans.

3Soak overnight; drain.

4Add 2 quarts of water, ham hocks, salt, pepper and bouillon cubes.

5Bring to a boil, covered, and simmer 1 1/2 hours or until beans are tender. Add tomatoes, onion, garlic, hot pepper and lemon juice.

6Simmer for 30 minutes, stirring often.

7Remove ham hocks, debone and return to soup.

8Yields 2 1/2 quarts.
