- 1 (9-inch) baked pie shell
- 1 1/2 c. sugar
- 5 1/2 Tbsp. cornstarch
- 1 1/2 c. hot water
- 3 egg yolks, slightly beaten
- 5 Tbsp. lime juice
- 1 1/3 Tbsp. grated lime rind
- green food coloring (optional)
Directions

1Mix sugar, cornstarch and water.

2Cook over moderate heat, stirring constantly, until mixture thickens and boils.

3Boil 1 minute and slowly turn half of mixture into egg yolks.

4Then beat into hot mixture in saucepan and boil 1 minute longer, stirring constantly.

5Remove from heat, continue stirring until smooth. Blend in lime juice and grated lime rind and food coloring.

6Pour into shell, top with meringue.

7Bake in 400° oven for about 10 minutes, until meringue browns.

8Cool away from draft.
