- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1 teaspoon cinnamon
- 1/3 cup melted butter
- 4 egg yolks
- 2 egg whites
- 1 (14 ounce) can sweetened condensed milk
- 1/3 - 1/2 cup key lime juice (not reconstitued, I use just under 1/2 cup)
Directions

1Crust: Mix dry ingredients then add melted butter.

2Mix again.

3Press into 9inch pie pan.

4Bake 10 minutes at 325.

5Let cool.

6Filling: Beat egg yolks well.

7Add sweetened condensed milk and beat again.

8Very slowly, a little bit at a time add the key lime juice.

9Mix very well with your mixer.

10Rinse off the beaters to start to prepare the egg whites.

11Beat the egg whites until stiff glossy peaks form.

12Fold egg whites into the yolk mixture.

13Texture should be even.

14Pour into pie crust pan.

15Bake 20 min at 325.

16Cool, then refrigerate at least 2 hours before serving.
