  • 1 liter Coconut Milk, Divided
  • 1 Tablespoon Curry Powder
  • 100 grams Shallots, Chopped
  • 500 grams Chicken
  • 200 grams Carrots, Sliced
  • 400 grams Potatoes, Chopped
  • 100 grams Green Beans
  • 200 grams Onions, Chopped
  • 3/4 teaspoons Salt, Or To Taste
  • Brown Rice, To Serve

Directions

    Pour about 1 cup of the coconut milk, curry and shallots in a large saucepan over medium high heat and heat 10 minutes.

    Add meat and cook until sauce has thickened slightly.

    Add carrots and potatoes and cook another 5 minutes.

    Add the remaining coconut milk and cook until boiling.

    Add green beans and onions and simmer 20 minutes.

    Add salt to taste.

    Serve over brown rice.
