  • 1 pound Raw Shrimp, Tail On
  • 1/4 cups Olive Oil
  • 1 whole Lime, Juiced
  • 1 Tablespoon Honey
  • 1/2 Tablespoons Dried Thyme
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoons Cayenne Pepper
  • 1 whole Handful Cilantro, Finely Chopped
  • 1 whole Small Jalapeno, Minced
  • 2 cloves Garlic, Finely Chopped

Directions

    If using frozen shrimp, place in colander under cold running water for 3-5 minutes until thawed.

    Let drain while mixing together the marinade.

    In a small mixing bowl, combine olive oil, lime juice, honey, thyme, cumin, paprika, cayenne pepper, cilantro, jalapeno and garlic.

    In a shallow baking dish, spread the shrimp out in a single layer.

    Pour the marinade over the shrimp and turn them once or twice so they are fully coated.

    Cover with plastic wrap and refrigerate for 2-3 hours.

    Skewer shrimp before cooking.

    5-6 per skewer should be just right.

    Grill over medium heat for 3 minutes on each side.

    Be careful not to overcook them.

    *Cooks note: this recipe served four with lots of grilled vegetables and pasta salad to complete the dish.
