- 1 c. half-and-half
- 3 drops hot pepper sauce
- 1/4 tsp. cumin
- 4 large russet potatoes
- 1 1/2 c. shredded Monterey Jack cheese, divided
- 1 (4 oz.) can chopped green chilies, drained
- 1/2 c. thinly sliced onion
- 1 small tomato, thinly sliced
- 1 Tbsp. minced cilantro (or 1 tsp. dried parsley)
Directions

1Preheat oven to 375°.

2Mix half-and-half, hot pepper sauce and cumin.

3Peel potatoes and cut into thin slices or julienne shreds.

4Reserve 3 Tbsp. cheese.

5Alternate layers of potatoes, chilies, onion, half-and-half mixture, and cheese in a lightly greased casserole dish.

6Cover with foil.

7Bake for 30 minutes or until potatoes are tender.

8Remove foil.

9Arrange tomato slices on top and sprinkle with reserved cheese.

10Bake for five more minutes or broil for 2-3 minutes until cheese is golden brown and bubbly. Sprinkle with cilantro and serve.
