Ingredients
- 2 each bacon rashers, coarsely chopped
- 500 grams chicken drumettes
- 1/2 cup arborio (short-grain) rice or Spanish rice
- 1 each sweet red bell peppers red, finely chopped
- 1 litre chicken broth
- 1 pinch saffron threads
- 1/2 cup peas, frozen
- 1 x mayonnaise whole egg to serve
Directions

1Heat a large oiled frying pan over a medium heat.

2Cook chicken for about 10 minutes or until golden brown and just cooked through.

3Add bacon and cook for 2 minutes or until crisp.

4Stir in rice, then stock and saffron.

5Bring to boil and then simmer uncovered, without stirring for about 12 minutes or until rice has just softened.

6Sprinkle peas over rice for last 2 minutes of cooking time.

7Serve topped with a dollop of mayonnaise, if desired.
