Kielbasa Casserole

Ingredients

  • 1 lb. kielbasa, cut in 1/2-inch pieces
  • 3/4 c. chopped onion
  • 1 tsp. minced garlic
  • 1 (16 oz.) can tomatoes, cut up
  • 1 tsp. dried thyme
  • 1/2 tsp. pepper
  • 1 (19 oz.) can white or butter beans
  • 1 (10 oz.) pkg. frozen chopped mixed vegetables, thawed and well drained

Directions

    Lightly grease a 2-quart baking dish. Brown and drain kielbasa in a large skillet. Stir in onion and garlic, then tomatoes. Cover and simmer over low heat 10 minutes or until onion is tender. Add remaining ingredients.

    Stir to mix.

    Transfer to baking dish. Bake, covered, at 350° for 30 minutes until hot and blended. Serves 4.
