Ingredients
- 1 tablespoon oil
- 1 red onion thiny sliced
- 2 cups red cabbage finely shredded
- 1 apple peeled, cored and grated
- 1 pinch ground cloves
- 1 tablespoon red wine vinegar
- 1 teaspoon sugar
- 14 ounces kielbasa cut into bun-size lengths and halved lengthwise
- 4 submarine rolls split
- 2 cups baby spinach leaves
- coarse grain mustard to serve
Directions

1Heat oil in a large skillet on medium heat. Saute onion 4-5 mins, until tender. Add cabbage and cook 2-3 mins, until wilted. Stir in apple and cloves; cook a further 5 mins.

2Add vinegar and sugar. Season to taste; cook a further 3-4 mins.

3Meanwhile, heat a grill pan or skillet on high heat. Spray sausages with no stick cooking spray. Cook 2-3 mins, turning, until browned and heated through.

4Fill rolls with cabbage mixture, spinach and sausage. Serve with mustard.
